Every year we change the menu three times: spring, summer and fall-winter. We work side-by-side with local producers to guarantee the maximum freshness and quality of the products. We choose the finest with them, who are the ones who know their products the best. Work that starts one year before the new menu reaches the hands of our guests. It is the total manifestation of our creative process. Analyzing, reflecting, adopting different approaches.

Sena

‘Sena’ is the word that in Basque defines instinct, the inner voice, the innate sense that is forged in the culture and identity of the land we inhabit. In this time of uncertainty, in which everything is doubt, our only guide has been and it is the instinct. We wanted to give it a voice in a gastronomic proposal that was born from within us: a 5-step menu made up of iconic Nerua dishes.
